Parmesan Chicken


Parmesan Chicken

4 to 6 boneless, skinless chicken breasts
1 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 extra-large eggs
1 tablespoon water
1 1/4 cups seasoned dry bread crumbs
1/2 cup freshly grated Parmesan, plus extra for serving
Unsalted butter
Good olive oil
Salad greens for 6, washed and spun dry
1 recipe Lemon Vinaigrette, recipe follows
Pound the chicken breasts until they are 1/4-inch thick. You can use either a meat mallet or a rolling pin.
Combine the flour, salt, and pepper on a dinner plate. On a second plate, beat the eggs with 1 tablespoon of water. On a third plate, combine the bread crumbs and 1/2 cup grated Parmesan. Coat the chicken breasts on both sides with the flour mixture, then dip both sides into the egg mixture and dredge both sides in the bread-crumb mixture, pressing lightly.
Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook 2 or 3 chicken breasts on medium-low heat for 2 to 3 minutes on each side, until cooked through. Add more butter and oil and cook the rest of the chicken breasts. Toss the salad greens with lemon vinaigrette. Place a mound of salad on each hot chicken breast. Serve with extra grated Parmesan.
Lemon Vinaigrette: 1/4 cup freshly squeezed lemon juice (2 lemons) 1/2 cup good olive oil 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
Yield: 6 servings

Good Morning Girls

Hey ladies! I just ran across this new bolg and I LOVE the idea behind what this lady has started! It's basically an encouraging accountability group that sends a little encouraging message each morning to everyone in the group once they have finished their quiet time and Bible study for the morning!! I LOVE IT!! I know how hard it can be to get up EXTRA early in the morning... when the baby has been up all night, when you're not feeling your best, when you're 31 weeks pregnant and you feel like you've just tossed and turned all night ;) or when you work inside the home and DON'T actually have to be up and ready to go somewhere!! I KNOW!! I'm living all of these things right now, lol!! But it really has been rewarding for me to get up each morning, while it's still dark, while it's peaceful in my home, and open up my Bible and allow my Father to speak to me. It REALLY helps me set my attitude for the day, so I can set our home's attitude for the day :) But ladies, it's SOOOO much easier to do these things when you know there is someone else doing it with you!! It really helps having that extra encouragement from others.

So, I'm inviting YOU to join me in starting a Good Morning Girls group!! S.a.i.l.o.r.---> She can write it :)

Here's a pic of the Ladybug hard at work this week: She was working on her R's. I also learned this week that she can spell and write her name all by herself now... NO HELP AT ALL :)

I just ordered a bunch of fun new toys to play with Cooc while we're doing Ladybug's school time. He did pretty good for his first time!! I brought out a couple different toys for him to play with and we sat down on the living room floor and went at it. He are a couple of pics:

I purchased these counting bears with stacking cups HERE. He really enjoyed them. He played with them for about 15 mins!


I showed him how to sort them into the cups according to their colors. Buuuuut....

...He had a better idea for them :)

We then decided we'd move onto our Geometric Stacker... purchased HERE. He really liked this one too. He LOVED the red ball (pictured by his foot) that stacked on the top! Mommy, not so much... the darn thing kept rolling under the couch :-/ and when you're 30 weeks pregnant, retrieving a little round ball under the couch every three minutes is NOT fun!! We really need a rug to put down to play on!!  He did great though!

Well my baby boy has turned 18 months old already!! Crazy how time flies. He's not a huge talker (of the English language anyways), but he's SUPER smart!! Knows everything we tell him. I'm curious to see how he does when little Neener gets here... think he might be a TAD bit jealous. Which will be different because the Ladybug never was jealous when Cooc arrived!


Anyways, we went outside to play and I got a couple pictures of them both :) I heart them so much!!

I'm Baaaack!!

So, apparently the whole blogging thing didn't work out very well for me... my last post was 3 years ago, lol!! But I've really been wanting to get back at it!! So to catch up the 2 followers that I had 3 years ago... We've had another child... a baby Boy named Casen! He's 18 months and is a little firecracker!! Constantly moving, on the go, getting into things, eating dirt, climbing things he shouldn't, LOL, and I'm soaking up every minute of it! God had a plan for us when He blessed us with Casen!! I was super scared to have a little boy, but I'm so glad that my Heavenly Father knows better than I do!! And to add to our fun and excitement we've been blessed with over the last 5 years, we are expecting another bundle of joy in May!! So I've been pretty busy making and raising babies in the last several years ;)

I wanted to start blogging again to to give a little sneak peak into our lives for our family and friends that live so far away from us! I've been homeschooling Sailor for the past year in Preschool, and plan to start Kindergarten with her in the fall. Also going to start Tot School with The Cooc as well!! (For those of you who don't know, Casen=Cooc... a nickname from the big sis!) And adding a newborn on top of all of this... I'm honestly not sure WHY I want to take on keeping up with a blog too, lol. Call me CRAZY!! We'll see how long it lasts ;)
